Guidance for restaurant safety is explicit about porous fabric uppers in cooking areas. Workers are advised to avoid porous fabrics such as canvas, because they don't provide enough protection, hot liquid spilled onto porous fabric can soak through and burn the foot underneath.

Do hospitality staff need certified safety shoes at all?
It depends on the role, and it's worth being straight about that.
